How to Cook Atico Style Porchettas

HOW TO COOK PORCHETTA IN A OVEN (TRADITIONAL OR STUFFED) 

Preheat oven 450f 

Put Porchetta 45 minutes on 450f

Turn down oven to 300f and cook for about 3 hour for 6 pound or until internal temp reach 145f for creamy pink porchetta or 165f for a firm porchetta.

Let Rest for about 25 minutes.

<<<TIPS>>>

Leave the porchetta 24 hour on the refrigerator uncover. Let the skin AIR DRY and before cook put some kosher salt.

PUT PORCHETTA 20 MINUTES BEFORE OVEN ON KITCHER COUNTER TO REACH ROOM TEMPERATURE.
