The top grade of genuine Japanese Wagyu from cattle raised exclusively in the Japanese prefecture of Niigata or "Snow Country", are aged in a harmonious balance of low-temperature, high-humidity environment. This meat has a delicate yet rich mouthfeel and a sweet, mellow taste. Snow-aging is an ancient Japanese process in which rare Wagyu spends 30 days in a Yukimoro—a storehouse covered with snow and insulated with rice bran.
