HOW TO BAKE A 3 POUND PORCHETTA
1. Preheat the oven to 475F.
2. Bake Porchetta for 35 minutes at 475F.
3. Turn down oven to 350f and cook for about 2 hours or until internal temperature reach 145F for a creamy Porchetta; or 165F for a firm Porchetta.
4. Let it rest for about 20 minutes before serve.
