HOW TO COOK 3 POUND PORCHETTA IN A OVEN
Preheat oven 450f
Put Porchetta 45 minutes on 450f
Turn down oven to 350f and cook for about 2 hours for 3 pounds or 3.5 hour for 6 pound or until internal temp reach 145f for creamy porchetta or 165f for a firm porchetta.
Let Reast for about 25 minutes.
Leave the porchetta 24 hour on the refrigerator uncover. Let the skin AIR DRY and before cook put some kosher salt
